"I bought this primarily for Dr. Scott Hahn's essays, which are excellent. I gave the book 4 stars because I found some of the instructions in the recipes unclear. Chef Geisser also assumes a fairly advanced level of cookery skill, both in subject knowledge and technique, and a fairly robust collection of equipment (fine sieves, dough hooks). Expect to do a lot of julienning, stock-making, and kneading. I wouldn't recommend this for casual home cooking, though the essays are, again, excellent, and the photography is lovely."
